    Mix the dough, don't knead hard or too much, to preserve the butter as cold as possible which is why I recommend cutting out big blocks of butter. After kneading rest in the freezer for 30mins.

    Roll your dough cut out into the shapes you like. Emmanuel and I started with a circle cutter and he decided to switch to hearts because he is in "love". Whilst cutting out the other cookies, any remaining dough can be put in the fridge to keep it as cool as possible.

    Bake at 180 degrees for 15mins. Allow these to cool and your cookies will be ready to eat in no time.
