Before you try your hand at turning tripe into a culinary treat in your own kitchen, you might like to know that the meat has a dense, chewy texture, much like sauteed or stewed calamari, but is less rubbery. Taste-wise, tripe is somewhat neutral but has a very subtle flavor of, perhaps, liver.

Wash the tripe and the intestines thoroughly. This was the worst part for me because it was my first time and my mom was basically just saying do this and that. It took me time to finish because I was it took me a while to figure out where to start from and my brothers chipped in later. If it's your first time cleaning these don't be stressed or give up so soon, get help if you need it.

After cleaning then cut your pieces up mixing the intestines and the tripe.

This is optional. You can take a piece of tribe roll it then bind it using a long intestine.

Add salt and put these in a pressure cooker for 2 hours at high pressure or 4 hours in a pot You want to clean up immediately after putting those in a pressure cooker or pot otherwise you shall be the lord of the flies. This was a wonderful time for us as my mom and my siblings shared memories and stories of things that took place at the village.

Make a soup using desirable spices and allow it to simmer.

Add the tripe and intestines to the soup, allow it to simmer for 10 to 20 minutes.
