pig’s trotter, also known as a pettitoe, is the culinary term for the foot of a pig. The cuts are used in various dishes around the world and experienced a resurgence in the late 2000s.

My trotters were already cleaned and cut, so I just rinsed them and put them in the pressure cooker for two hours. You can boil this in a pot for 3 hours alternatively. I also added salt to the pot.

When the trotters have boiled, separate the bones from the soft chewy meat and skin. Cut it into small pieces.

Make a Tomatoe and and onion soup. After 5 to 10 minutes of simmering, add your chopped trotters. Cover it and allow to simmer for 15 to 20 minutes and serve.
