Thinly slice your pork then marinate it with any spices you prefer, I normally just add curry because I like my pork "hot". Cut your peppers and carrots to match the size of the pork. When done heat your oil at medium-high in a non-stick pan or skillet.

Gently add your pork then cover the pan and allow your pork to cook. In intervals of 5 minutes stir your pork and cover.

After 20 minutes your pork should be cooked so we add our peppers. Stir-fry for 5 to 10 minutes and serve.
