This recipe is very important to me. My mom passed it down to me and I guess she also got me hooked to it. I have always loved this porridge for a long as I can remember because even when I was sick mom would make it for me. I don't know why now associate craving for sour porridge with pregnant women, maybe I have been pregnant since I was 6 😂.

Mix water and mealie meal in an airtight container. Place in a warm place or in the sun for 3 days straight.

Bring to the water to boil, add the mealie meal paste and simmer for 10 minutes, stirring from time to time and watching carefully that it doesn't stick to the bottom of the pan.

Or boil water, set it on the side. In a different pot add mealie meal paste then add water. Simmer for 10 minutes. When adding the mealie meal paste please bear in mind that the paste thickens hence if you put too much the porridge will become semi solid and fail to simmer well.

For a shortcut, you could make porridge from regular porridge then squeeze lemon into it and let your porridge simmer. I personally feel the sourness brought out by this flavor isn't as bomb as the fermentation method but sometimes the craving wins
