Many people call it an "inferior product" from where I am from and most of the people that have been to boarding school hate them but your girl loves them. I got this recipe from my mom and it's probably why I love them.

The Red Speckled beans commonly known as the sugar bean is a legume. It is grown for it’s seed, which is eaten as a vegetable. It has a high soluble fiber content. Soluble fibre absorbs water in the stomach forming a gel that slows down the absorption of the bean’s carbohydrates

Soak your beans overnight in cold water or for about 4 hours in hot water during the day. I prefer the overnight method because that's what mom taught me.

Boil your beans for about 2 hours on in the stove or use the beans option on the pressure cooker. Whilst boiling your beans you can be making your soup. Fry your onion, add tomatoes, salt and soup powder. Allow your soup to simmer.

When your beans are ready, add them to the soup and allow to simmer do 10 minutes then serve.
